Roasted Blue Corn Meal. Whole kernel roasted before milling gives a special flavor.
A whole grain that is roasted before milling and is used to make atole, one of oldest traditional Pueblo foods of the Indian Nations. The roasted meal is interchangable, in recipes, with any other corn meal. Atole is made by mixing this roasted meal with water or milk and sugar, then heated for a delicious and nutritious drink. The corn meal can also be mixed to a thicker consistency and cooked to make a corn meal porridge. Additional ingredients can be added to these mixtures according to taste -- cinnamon, honey, raisins, sugar, salt or a little imagination can make a tasty and exciting traditional meal. Pueblo cooks prefer to use this roasted corn meal over unroasted cornmeal in their favorite recipes because of the richer flavor.
Misc.: No Additional Shipping Charges, Blue Corn Meal milled from Indian Blue Corn, Blue Corn Kernels are roasted to enhance flavor, Use in any recipe calling for regular cornmeal

Resolved Question: Where can I find rosewater for flavoring foods?
Over the summer, I happened to try a rose-flavored milkshake. It was incredibly delicious and I looked up some recipes, but theyall call for rosewater or rose syrup, and I don't think I can just grind up some rose petals, it has to be distilled by a special process. Would Indian food stores carry it do you think?

Resolved Question: How can I make better rice?
I love foods from all around the world, and one of my favorite staples is rice.
A couple of years ago I bought a rice-cooker from a Japanese marketplace. I've followed the directions that came with it closely, but my rice never has that sweet, slightly sticky quality that I love about Asian rice. I've bought rice from the Japanese market, but it's still not quite as good as what you'd get in a restaurant. Am I missing something? Any tips or tricks?
Also, I'm in love with Indian style saffron rice, but I've never made it at home. Does anyone have a recipe?
Wow! What great advice everyone! I'm excited to make rice again tomorrow using the info and techniques described.
